All proper chai wallas go through a process that is designed to create the taste profile and marry the sweet, spicy, warming, reassuring clean tang. Chai starts simply with a flame and a kettle, then some of the spices, watching and waiting until the flavor hits a point where the tea can be steeped, sweetness added, spices with other timing added and tweaked…watching the ribbons of flavor blend and steam.
